What to pair with Cabernet Sauvignon

Got meat? Then Cab wants to come over to play. Full-bodied and rich, Cabernet Sauvignon is assertive and complex, moreso than Merlot (its gentle neighbor in Bordeaux). It has plenty of tannin and acidity and shows off flavors of blackberries, plums, and cassis, along with vanilla, cedar, chocolate, and coffee.

Bottom line, it's a great choice for big, meaty dishes and rich sauces. And it's friendly with all manner of preparations: braised, broiled, roasted, grilled, seared, stewed.

Here are some of our very favorite pairings from AllRecipes.com with Cabernet Sauvignon:

1. Blue Cheese Burgers

Why it works: You can't go wrong with a grilled burger and Cabernet; it's already approaching perfection. But add a little funky blue cheese, and the Cab friendliness goes extreme.

2. Rosemary Braised Lamb Shanks

Why it works: Lamb and Cab, it's kind of a no-brainer. (See also, Grilled Lamb Chops and Roasted Rack of Lamb.) What helps vault this recipe over the top is the rosemary. Cabernet just loves it. Truthfully, rosemary makes almost any dish more red wine friendly.

2015 Napa Valley Alpha Mare Red Release

As a winemaker, we are usually very focused on the vintage at hand. But, sometimes we are sent back into time when a wine which is in the market makes waves or when a consumer emails with a question about an older vintage in their cellar. Earlier this year, I was very pleasantly jolted back to the 2015 vintage when Our Alpha Mare blend received a Double Gold and 95 points from the prestigious American Fine Wine Competition.   

It took me back a bit, recalling that vintage and the time we spent making this wine.  The vintage was small, owing to a string of dry years as well as cool temperatures during the bloom. The Blossom Creek Vineyard which was where the bulk of this fruit came from showed very well that year. We harvested Cabernet Sauvignon and a bit of Petit Verdot which were co-fermented. This was the first year that I started playing around with barrel fermentation in my wines and I can still recall the fun of trying to figure out how to make that all work at our winery. Getting the barrel heads off, the grapes in and the heads back on has become something I can do without thinking much, but in that first year, it was a new skill being developed and a little daunting. Rolling the barrels in order to encourage extraction was also fun, but at that time, took a lot of space before we invested in barrel rollers.   

2015 taught us so much and we are so blessed to be able to do what we do. It is particularly pleasing when others appreciate the wines that we put so much individual thought and effort into.

Cabernet Sauvignon source for Alpha Mare comes from the famed Prichard Hill area of the Napa Valley. This small amount of mountain fruit is thick and dense, with tiny berries. It provides a strong backbone for Alpha Mare, giving it firm tannins and a depth and minerality that is unique to this location.

Red Mare Wines 2014 La Vaquera Scores 93 Points & a Double Gold Metal

At the 2019 American Fine Wine Competition, our 2014 La Vaquera not only received 93 Points, but earned a Double Gold Award. These intense and lush flavors we get from the lean soils, namely in Calistoga, allowed us to find the "just right" window of physiological maturity and concentration of flavors. This wine is a blend of our richest, darkest and juiciest wines. Petite Sirah, Petit Verdot and Malbec and make up the main voice of the blend.

Red Mare Wines 2015 Alpha Mare Red Scores 95 Points & A Double Gold Metal

At the 2019 American Fine Wine Competition, our 2015 Alpha Mare Red not only scored 95 Points, but won a Double Gold Award.


This wine opens with a generous full and complex nose constructed of vanilla, cedar, graphite and black currant.  Warm and comforting aromas of shortbread, warm blackberry pie and flint keep one coming back to this wine again and again.  In the mouth the wine has lots of generosity but also lots of tension.  Fine grained tannins mingle with a firm acidity to lift the wine in the palate and gives it a sense of energy. The tannins settle on the finish and lead the wine to a pleasing bloom of rich dark fruit.

This wine is one you want to stock up in your cellar for years to come and is sold in a beautiful 6-Pack.
